All materials from my stores got lost, even though nobody stole from me!

If your stores do not work (you have no people to operate them, see
Priority), then all materials stored within them get lost.

Mages/Thieves/soldiers left my army!

You did not have enough people to operate all buildings. Buildings that do
not work, are not counted when accommodation for your units is calculated.
Anyone living in a building that does not work, gets demoted.
